A couple thoughts on eggs

I recently went to dinner at a friend's house, and was reminded through our conversation of my favorite food.  Eggs.  I really like eggs.  Boiled, baked, fried, and served on anything from french fries to corned-beef hash.  So in honor of Jerry (who claims to actually read what I write), here is one of my favorite things to do with eggs.

Breakfast eggs.  This is a fairly easy subject, provided you don't overcook the eggs.  So the best way to do them:
Cut up sausage patties, bacon slices and super thick ham slices (like 1/2-3/4 inch).  (Note: Stephanie is a bit mad at me for this - she claims you should stick to one type of meat.  Silly girls.)  Brown these in a pan on medium heat.  A nice cast iron skillet would work well.  Lower the heat to low-medium, and add a bunch of eggs.  Toss in some shredded/crumbled cheese (cheddar or mozzarella).  Stir the eggs constantly, until the curds become thicker, and the whites just move from translucent to opaque.  It's probably a good idea to turn the heat off for the last minute or so, because the heat from the pan will continue to cook them.  If you're feeling especially Chilean, you can serve them in soft tortillas for a lovely breakfast taco.
